People have been asking what we do with all the sausage and charcuterie we make, so I've expanded the recipe section of The Sophisticated Pig to include some of our favor ways to enjoy our charcuterie efforts. Some folks may question the need for this recipe, but as of Fall 2019, we have subscribers around the globe (Excellent!) and perhaps they do not know the wonderful sandwich that is the Bacon, Lettuce and Tomato (BLT). Here is our version
Ingredients:
4 pieces of bread (we prefer sourdough or multigrain)
5 oz of House Cured Bacon (Recipe is Here)
3 Large leaves of Romaine Lettuce
1 large Heirloom Tomato, sliced thick
1/2 ripe avocado
Mayonnaise as needed
Steps:
1. Cook the bacon to your desired crispness. We use a microwave bacon tray to cook.
2. Lightly Toast your bread
For each sandwich:
3 When toast is ready, generously spread on piece of toast per sandwich with Mayonnaise. Don't be tempted to go light on the Mayo, generous means a moist sandwich.
4. Crush and spread the other piece of toast with 1/4 of the ripe avocado
5. On the bread, layer 1/2 the bacon, then lettuce two leaves thick and top it with tomato.
6. Finally top with the second piece of bread and enjoy.
